It’s less than 2 months into the school year and I’m so over making lunches for the kids. Same for my husband who has done the majority of the lunchbox assembly. The recipes and ideas in Weelicious Lunches are perfect for busy parents. They’re simple and easyto cook or assemble. She puts fun twists on kid-friendly favorites like PB&Js made in a waffle maker/iron or crispy chicken bite (baked, not fried). Her recipes aren’t just for kids. I’m excited to make her avocado hummus for my next sandwich!
The first chapter offers plenty of tips on packing and assembling school lunches. She even has suggested lunchbox combinations that I will definitely scan when I’m stumped with my kids’ lunches. I also love her ideas for turning dinner leftovers into lunchbox solution. Having a well stocked pantry is important for this. Some recommended pantry staples are sugar snap peas, Greek yogurt, cream cheese, carrots and bananas. With plenty of pantry staples on hand it’s easy to whip up leftovers into something new.
I always have plain yogurt in my fridge. The kids will eat it for breakfast with a honey or chocolate syrup. I use plenty of plain yogurt (Greek and regular) in my cooking and baking. Using plain Greek yogurt, I made the Zippy Tahini Sauce from the cookbook. We had leftover rotisserie chicken in the fridge so I used the sauce to add a bit of zip to my lunch.
Large flour tortillas are a staple in my home. They’re perfect for giant quesadillas or wraps for lunch. After a generous spread of the Zippy Tahini Sauce on my veggie tortilla, I added leftover shredded chicken and my new favorite salad mix: baby kale, chard and spinach. It was quick work to assemble and roll up. Ta-da! Add some carrots and chips and my lunch is made. After I took photos of the wrap, my 3-year-old demanded and ate half the wrap. It’s definitely kid approved!
