I just checked off something big from my bucket list: make a prime rib roast at home. It’s my favorite cut of beef, but I’ve only eaten it in restaurants. I wanted to roast one last year for Christmas dinner but chickened out. This year I faced my cooking fear!
Turns out, making prime rib isn’t as hard or scary as I originally thought. All I needed was time and patience for this pomegranate balsamic glazed prime rib. It’s quite the showstopper and perfect for a holiday dinner. Pomegranates are in season right now, but save yourself the work and purchase bottled pomegranate juice. You can sprinkle pom seeds as garnish if you wish.

Before I got in the kitchen, I read up on roasts on the Roast Perfect App (iOS & Google Play) by Certified Angus Beef. The app gave me the knowledge and confidence I needed in the kitchen. The roast timer even walked me through the sear, roast and rest process–complete with temperature and timing. I just had to focus on how I wanted to flavor my steak. Win-win!
The good thing is there’s not a lot of hands on time for the roast. The garlic thyme rub needs to sit on the roast for an hour. This is when you should make the glaze and prep your sides. I only took the roast out twice to brush on the glaze during the 1 hour and 50 minutes of roasting time. See what I mean by low maintenance?
Once the roast is cooked to your desired temperature (we cooked it to medium 145F), it just needs to rest for about 20 minutes (or whatever the Roast Perfect app suggests based on the roast’s weight). Make sure to invest in a digital food thermometer (that one is only $14). You’re investing money and time in a good cut of beef so you definitely don’t want to overcook it.

- 6 pound prime rib roast or boneless rib roast
- 5 medium garlic cloves, peeled and roughly chopped
- 3 T fresh thyme leaves
- 2 T kosher salt
- 2 tsp freshly ground black pepper
- 3 T olive oil
- 2 cups of low sodium beef broth
- For Glaze
- 1½ cup of pomegranate juice
- 4 medium sprigs of fresh thyme
- ¼ cup brown sugar
- ¼ cup balsamic vinegar
- In a small bowl mix garlic, 3 Tablespoons of thyme leaves, salt, black pepper and olive oil. Pat roast dry with paper towels. Using your hands, spread the rub all over the roast. Let it sit for 1 hour at room temperature.
- While the rub sits, prepare the glaze. In a medium saucepan, add pomegranate juice, thyme sprigs, brown sugar and balsamic vinegar. Cook over medium high heat until it reaches a simmer. After 5 minutes, remove thyme sprigs. Bring to a boil and reduce the glaze until you have ½ a cup, about 10-12 minutes. Set aside ¼ cup of the glaze for serving. The rest will be brushed on the roast during cooking.
- Preheat the oven to 450F. Place roast fat size up on roasting rack placed inside a deep pan. Pour 1 cup of beef broth and 1 cup of water in bottom of the pan (this will reduce smoke while it cooks). Cook roast for 15 minutes at 450F.
- Reduce oven temp to 325F and continue to roast for 40 minutes. Make sure to add more water to the bottom of the pan so the drippings don't burn.
- After 40 minutes, brush roast with ⅛ cup of glaze. Roast for another 30 minutes. Glaze again and continue to cook for 30 minutes or until roast reaches desired internal temperature (145F for medium.) Add water to bottom of the pan as needed.
- Remove roast from oven. Tent with foil and allow to rest for 20 minutes. Reheat reserved glaze to serve as sauce.
- Optional: Make jus from pain drippings: Add ½ cup of beef broth into warm roasting pan and stir to scrape up the beef drippings. Season with salt and pepper as needed. Strain.
- Set on platter and wow your friends!
