I’ve brought my kids over to the tofu side and my husband is slowly warming up to it. I’m not sure why tofu gets such a bad rap, but I’m always happy to find delicious recipes to test out on my husband. My husband and I had fun trying out Boloco for the first time. They have a diverse selection of burritos. I tried the Bangkok Thai with the baked Nasoya tofu while my partner in crime played it safe with Memphis BBQ with chicken. We had fun ordering our food on the touchscreen. Sometimes I have a hard time making up my mind so I’m glad I wasn’t holding up the line. You can also order by talking to a real live person if the touchscreen isn’t your thing.
The tofu in my Bangkok Thai burrito was very flavorful. I even made the mister taste a piece and he claimed to like it. That’s ok, I’ll win him over one of these days! If you want to incorporate tofu into your diet, trying them in flavorful burritos like the ones from Boloco are a good way to go. Tofu is one great because it easily absorbs whatever marinade or seasoning you give it.

Baked Cajun Tofu from Boloco
Ingredients
Nasoya Tofu
Cajun Spice Mixture
Pan Spray
Appearance of Tofu: Tofu is milky white in color when first out of the package. It will look light-golden brown out of the oven. The texture of roasted Tofu is crisp golden-brown with moist interior. Do not over roast.
Instructions:
2. Place on a cutting board and cut the “brick” in to 5 pieces lengthwise.
3. Spray the clean baking pan with non-stick spray and lay the tofu on the tray. Once the tray is full (be careful to leave 1/2 inch between the pieces so roasting happens consistently), liberally season the topside with Cajun seasoning.
4. Roast for 15 minutes in oven at 450°F.
5. After 15 minutes remove and turn using spatula. Liberally spice second side with Cajun seasoning and place back into oven at 450°F.
8. Once complete, remove from oven and enjoy
