Halloween is not a spooky affair for our family. We prefer to keep our celebration light and fun, like the 2016 Ghostbusters movie. Of course, an in-home movie night at home wouldn’t be complete without a themed food: enter the not so spooky mummy calzone.
The mummy calzone is super easy to make. It takes less than 10 minutes to assemble and another 20 to bake. Which means you’ll have more time to watch all the Ghostbusters extras!
In my recipe notebook, I sketched how I wanted the mummy calzone to come together. I usually make a shopping list on a piece of paper , but half the time I leave it at home. Now we make our shopping list on Google Keep. I share it with my family and they can add items on it as needed. Since my smartphone is always with me, I wouldn’t be able to forget my list at home.
Assembling Mummy Calzone
Tip: Using pre-made ingredients can cut down time in the kitchen without cutting the flavor.
I never feel guilty about using pre-made ingredients. For this recipe, I used refrigerated pizza dough in a can (easier to unroll) and jarred pizza sauce. Don’t ever feel guilty for making your life easier! My calzone is stuffed with mozzarella cheese, ham, and spinach–but you can put whatever fillings you want. Try a pesto instead of a tomato based pizza sauce or add pepperoni or sausage. Whatever you want!
Remove the pizza dough from the package and unroll unto a greased cookie or baking sheet. You’ll want to press out the thicker edges to make the dough bigger and thinner. Using kitchen shears, cut 1/2 inch strips on opposite sides of the pizza dough. Leave an approximately 3-inch wide section in the middle uncut. Try to cut an equal number of strips on each side, but if you don’t it’s not a big deal.
Now is the fun part! Fill the middle, uncut section of dough with your favorite ingredients. I made this one extra cheesy because my kids love super cheesy calzone. If you spill sauce on the strips, just wipe it up the best you can (like I did above). No will know once it’s wrapped up.
Here’s the part that looks complicated, but is easy! Carefully pull up each strip of dough and wrap it around your filling. Alternate sides so they overlap. Don’t worry if it doesn’t look perfect. The baking process will hide your mistakes.
Once you get to towards the mummy’s head, tuck the ends of the strips underneath the middle section to create a rounder part. Finish by pressing 2 sliced black olives for its eyes. Is it cute? Not even spooky but most definitely delicious.
Bake in an oven preheated to 400F for 20 minutes or until dough is golden and cheese is bubbly. It’s ok if the cheese melts out of the mummy. The crispy cheese bits are my favorite! Allow to cool for a 5 minutes before cutting so you don’t burn your mouth on the hot fillings!
