My kids are morning people. As soon as they’re awake, they’re bursting with energy, ready to go. My husband and I are not morning people. We need lots of coffee in the morning. We also need quick and easy breakfast options for the entire family. Finding a breakfast that everyone in the family likes that is quick to prepare on weekday mornings can be challenging. Fortunately, we all like waffles.  To make our mornings less stressful, I assembled a few frozen waffle breakfast sandwiches the night before so we could just heat them up before heading out for the day.

Our family loves Aunt Jemima Frozen Waffles because they don’t contain high fructose corn syrup. The Homestyle ones only have 3 grams of sugar for a serving of 2 waffles. Low sugar content is important to me because when my kids eat their waffles, they usually add maple syrup. I didn’t create a recipe for these make ahead frozen waffle breakfast sandwiches because they are easily customizable for those picky eaters in your family. I just make sure to include some lean protein like deli turkey or eggs.

For our sandwiches, I beat some eggs and cooked a thin, flat omelet, like a thin frittata. You can add spinach or arugula right into the eggs as they cook. I kept ours plain because I forgot to buy spinach and arugula. There’s always next time! Once the eggs are cooked, cut into rectangular pieces big enough to top the waffles. Because I used a round skillet, we had some pieces that were leftover, but I just hid them under the turkey and swiss cheese. No one could tell.

Pull out the frozen waffles to set up an assembly line. Remember to keep them frozen because you’ll be reheating the sandwiches when you eat them! Make sure you work fast so the waffles don’t completely defrost. Once assembled, I wrapped each sandwich in foil and returned right back into the new resealable Aunt Jemima waffle bags. Each bag now has 14 waffles, so I was able to make 7 sandwiches from each package. Return the bag to the freezer until ready to eat.

To heat them up, remove the foil wrapper and microwave on high for 30 seconds to slightly thaw out the sandwich. Then slide into your toaster oven to obtain the level of crunch you prefer. Or unwrap and place in a 350F oven for about 15-20 minutes–pack some lunches or get dressed while you wait. These are great for my husband because he can heat up a sandwich and eat it on this way out the door to work. It’s a hearty breakfast on the go!

My husband and I had woken up later than we wanted to, but we didn’t have to scramble for breakfast. Sophia is not a big sandwich eater so she just ate her sandwich deconstructed, which is a fancy way of saying she ate everything separately. Here she in ShopRite is contemplating which flavor/variety of waffle she wants. She eventually chose homestyle.
