Chocolate covered brownie pops

As much as I enjoy baking from scratch, I keep a few boxes of baking mixes in my pantry. I pull out baking mixes when I’d rather spend my time decorating my treats. Or when my sweet tooth needs a quick fix.

These easy brownie pops are the perfect example. I have to admit, putting any baked good on a stick automatically makes it taste better. Surely, you feel the same way?

Mixes like the new Nestle Toll House Brownies & More take care of the guesswork of baking. These mixes are easy to make and have no artificial flavors or colors. They bake perfectly every time, as long as I follow the instructions. I’m a bit of a rebel when it comes to recipes, so I like that the premium mixes from offer 3 different ways to prepare their mix.

The box has instructions for traditional brownies, brownie cookies, and swirled brownie cheesecake bars. Those all sound delicious.

How to make brownie pops

My husband loves brownies and my kids love cake pops. So why not take the best of 2 worlds and create brownie pops? I baked the brownies according the box instructions, but left out the semi-sweet chocolate morsels. After the brownies cooled completely, I cut them down to pop size. You don’t have to use a ruler like me, but it helps.

A 8×8″ pan of brownies gave me 10 brownie pops that are 1.5″ x 4″. You can cut them smaller but try not to go smaller than 1.5″ wide or tall. They’ll fall apart when you insert the sticks.

Important: Freeze the brownie pops for at least 30 minutes before dipping into the chocolate. Don’t skip this or your brownie pops might fall apart when you coat them in chocolate.

When you’re ready to dip, prepare your area before pulling the brownies out of the freezer. Melt your chocolate morsels (see recipe below for instructions), set out wax paper or parchment paper, and grab sprinkles if you’re using them.

Tip: Dip the brownies in batches of 2-3 pops. Leave the rest in the freezer until you’re ready to dip them.

Once they’re dipped, place the brownie pops in the refrigerator let the chocolate set. I have to admit, these brownie pops look adorable and the sticks make them easy to eat. They’d be a hit at parties–everyone can channel their inner child with the brownie pops.

Yield: 10 brownie pops

Using a premium packaged brownie mix lets you spend time decorating instead of baking.

Ingredients

  • 1 box NESTLÉ® TOLL HOUSE® Brownies & More Cookie Baking Mix with Semi-Sweet Chocolate Morsels
  • 1 10oz bag of semi-sweet baking morsels
  • 1 large egg
  • 1/2 cup vegetable oil
  • 3 Tbs water
  • 10 wood craft or popsicle sticks
  • 3 oz white chocolate baking morsels
  • sprinkles (optional)

Instructions

  • Preheat oven to 325F
  • Remove and set aside the 6 oz package from the baking mix box. In a large bowl, combine chocolate baking mix with egg, vegetable oil and water.
  • Pour batter into a 8x8" greased pan and bake for 20-25 minutes or until an inserted toothpick comes out clean. Allow brownie to cool completely.
  • Remove brownie from pan. Cut into 1.5x4" pieces (see photos above). Carefully insert craft sticks into the brownies, leaving about 2" as a handle. Place brownies on a baking sheet and freeze for at least 30 minutes.
  • Add both bags of semi-sweet morsels into microwavable bowl. Place in microwave on high heat for 30-second intervals until the morsels look almost melted. Stir to melt remaining morsels. Heat for another 15 seconds. Stir.
  • To dip brownie pops: Hold brownies by the stick and place into melted chocolate. Spoon melted chocolate on all sides of brownie, smoothing extra off with back of spoon. Place dipped brownie onto wax paper or parchment. Add sprinkles while chocolate is soft.
  • To make white chocolate drizzle: melt white chocolate the same method as semi-sweet morsels. Using a spoon, drizzle lines of white chocolate after the bars are dipped in semi-sweet chocolate.
  • Refrigerate brownie pops until chocolate is set, approximately 30-45 minutes.
